Re-handling a butcher knife

This is a project I had to move into my planning on short notice.

One of my neighbors asked if I could fix this knife that belongs to a friend of his who is a butcher. It’s not typical for me to accept jobs like this, mainly because they cost too much time to be economical. But as a favor to a neighbor I didn’t want to reject it either.

My first thought was stabilizing it with epoxy, but it would look like junk. that handle had had all of its useful life so making a new one was the only option. This is part 1 of the build, with full detail and commentary.
